She combined her background in business with her passion for cooking and opened her own catering business. She later worked as a sales director for The Pampered Chef for eleven years. She loved preparing food but wanted to do more. “I spent many years feeding people what they wanted to eat,” said Ms. Kelly, “but later learned how to feed people what they needed to eat.” She continued her education, conducted research, and received extensive training working as a nutritionist at a local health care facility for five years under a registered dietician. She worked primarily to educate people who were already ill and needed to modify their diet in order to control their disease or improve their condition, including diabetes, hypertension, osteoporosis, cancer, and heart disease. “It occurred to me that many of the patients’ chronic illnesses were preventable,” she said. “Lifestyle choices, including diet, have predictable consequences, such as obesity and heart disease. Why should you wait until you are sick to make those changes?” With a focus on prevention, Beth Kelly joined Hammond-Beyer Health Center three years ago and uses a holistic approach in her practice. During the initial consultation, she will ask about your medical history, current medications and dietary supplements, family history, and general lifestyle habits. She will ask you to keep a food diary for two weeks, which may help uncover patterns of unhealthy eating, such as learned behaviors, mindless habit, and emotional eating. She may identify toxins in the processed foods you are eating which can cause cravings and addictive behaviors. Lack of exercise, water, and the amount of time spent outdoors can also impact overall health. Based on your unique physical condition and situation, Beth will create a customized program that you can follow to achieve your goals. She can help you transition from poor food choices all at once or one step at a time. She can help parents make healthier food choices for their families. She can help develop weekly menus, teach correct portion sizes, and show you how to read and understand package labels. She will even go with you to the grocery store! Beth can help you “unrefine” your current diet. This means reducing or eliminating refined foods such as white flour, white sugar, and white rice, as well as processed foods which contain preservatives and harmful trans fats. Partially hydrogenated oil is particularly problematic. Hydrogenation is a chemical process used to solidify and increase the shelf life of liquid oil, but it converts it to a substance that is unnatural to the human body. Because it cannot be processed efficiently, it accumulates in the body and clogs arteries and organs. “The current Standard American Diet is SAD!” Ms. Kelly said. She advocates eating a high percentage of raw, unprocessed, plant-based foods as the best source of nutrition. In addition to disease management and prevention, nutrition counseling can be helpful for parents of children with ADD (Attention Deficit Disorder) or ADHD (Attention Deficit Hyperactive Disorder). Children who are restless and unable to stay focused often show remarkable improvement when foods containing dyes, preservatives, and unnatural chemicals are removed from their diet. Beth Kelly offers private and group nutrition counseling sessions on weekdays and evenings by appointment.
